Which foods raise nitric oxide?

Almost every blood-flow supplement in the men’s aisle is built on one pathway: arginine plus nitric oxide synthase makes nitric oxide. What most product pages never mention is that your body has an entirely separate route to the same molecule — one that runs through your salad and the bacteria on your tongue.
That second route has better human evidence than most supplements in this category, and it is available in a supermarket.
The entero-salivary nitrate pathway, explained
Certain vegetables are extremely rich in inorganic nitrate. When you eat them, nitrate is absorbed, and a portion is concentrated by the salivary glands and secreted back into the mouth. There, bacteria living on the surface of the tongue reduce nitrate to nitrite. Swallowed nitrite is then converted into nitric oxide, particularly in the acidic environment of the stomach and in low-oxygen tissue conditions.

What the trials found
A systematic review and meta-analysis of the effects of inorganic nitrate and beetroot supplementation on endothelial function found measurable improvement, and a further systematic review and meta-analysis of beetroot inorganic nitrate supplementation and cardiovascular risk factors reported effects on blood pressure and related measures.
Those are vascular endpoints rather than sexual ones, and it is worth being precise about the gap: nobody has run a large trial of beetroot juice for erectile function. But erection is an endothelial event driven by nitric oxide, so an intervention that reliably improves endothelial function is mechanistically relevant in a way that most botanicals are not.

The mouthwash problem
This is the detail that makes the pathway memorable. Because the nitrate-to-nitrite conversion is performed by bacteria on the tongue, removing those bacteria interrupts the chain. Studies of the nitrate pathway have observed exactly this effect with antibacterial mouthwash, and it is a genuinely strange interaction between oral hygiene and vascular physiology.
The practical version is modest and not a reason to abandon dental care: if you are deliberately eating nitrate-rich vegetables for vascular benefit, heavy daily use of a strong antiseptic mouthwash works against you. Ordinary brushing and flossing do not.

Dietary nitrate is one mechanism inside a broader and better-established finding. Analysis of the association of diet with erectile dysfunction among men in the Health Professionals Follow-up Study found lower risk in men whose diets were richer in fruit, vegetables, nuts, legumes and fish. Nitrate is plausibly part of that story; polyphenols, fibre, unsaturated fats and simply displacing worse foods are all part of it too.
The honest framing is that dietary pattern beats any single nutrient. Nitrate-rich vegetables are a good bet inside a good diet, not a supplement you happen to chew. The same logic applies to omega-3 fats and vascular inflammation.
If you take nitrate medication for angina, do not add concentrated nitrate supplements without medical advice. Vegetables in a normal diet are a different question from a concentrated shot, and your prescriber should know what you are taking.
Where supplements still have a place
None of this makes the arginine pathway irrelevant. A small study found that oral L-citrulline improved erection hardness in men with mild erectile dysfunction, and citrulline remains the more efficient precursor. The sensible reading is that the two routes are complementary rather than competing: diet supports the nitrate pathway continuously, while a precursor supplement targets the enzymatic one.
What the diet route has that supplements do not is a long safety record, meta-analytic support for a hard vascular endpoint, and a cost of a few pounds a week. That is a strong position, and it is rarely advertised because nobody has a patent on rocket.
What the evidence shows, and what it does not

What it does not show: that beetroot juice treats erectile dysfunction, that any single vegetable produces a noticeable acute effect, or that concentrated nitrate supplements share the safety profile of the vegetables they came from. This is a slow, cumulative, cardiovascular intervention — which is exactly what erectile health responds to over years.
